Head Cook

Job Summary: Compass Mexican Bistro is a vibrant, specialized locale serving traditional authentic Mexican food. Responsibilities: * Check for stock levels and order stock as needed; maintain inventory of all essential ingredients and supplies * Set up stocking stations with all necessary supplies * Prepare food for service (e.g. processing vegetables, butchering meat, preparing salsas and dressings, marinating proteins, making tortilla dough) * Cook menu items independently and in cooperation with bistro owner * Answer to, report to, and follow bistro owner's instructions * Receive and cross-check stock deliveries; follow-up on issues * Manage food line workflow, directing staff as needed * Ensure that food comes out to specified high standards and in a timely fashion * Comply with Canadian nutrition and sanitation regulations and safety standards * Maintain a positive and professional approach with coworkers and customers; able to resolve conflict diplomatically * Clean up stations and ensure leftover food is handled appropriately * General and routine cleaning of entire premises * Related duties as assigned and from time-to-time (e.g. food line work, cashier, barista) to support workflows and staffing levels Required Qualifications: * Proven cooking experience in a small, specialized restaurant setting, specifically Mexican * Excellent understanding of various cooking methods, ingredients, equipment and procedures * Ability to develop recipes for traditional Mexican foods, adapting for local market and food source availabilities * Accuracy and speed in executing assigned tasks * Familiar with industry's best practices * Highschool graduation (grade 12) * Minimum 2 years experience as cook * FoodSafe Level 1 * Good fluency in English, both spoken and written See https://www.facebook.com/CompassMexicanBistro/ for full job description.
